Sandra Kay Anderson (Speichinger), 83, of Council Bluffs, IA
Sandra Kay Anderson (Speichinger), lovingly known as Sandy, 83, of Council Bluffs, Iowa, passed away peacefully at home surrounded by family on March 20, 2026. Sandy was born on April 26, 1942, in Norfolk, Nebraska, to Melvin James Speichinger and Gwendolyn Delores Speichinger (Lycan). She graduated from Sioux City Central High School in 1960 and attended the University of South Dakota in Vermillion, SD where she and Ed met. On August 11, 1963, Sandra married G. Edward "Ed" Anderson, with whom she shared a loving life.
Sandy was preceded in death by her parents and is survived by a brother, Dr. James Speichinger (Rene) of Anthem, AZ. She was a devoted mother to Sheryl McCullough (Tom) of Wolfeboro, NH, and Susan Wiley (Mike) of Olathe, KS, and a proud grandmother to Thomas McCullough Jr., Mallory McCullough (Nikolas), Jackson McCullough, Reagan Wiley, Jenna Wiley, Harper Wiley, and several nieces & nephews.
Sandy and her husband Ed are best known for the Donut Nook in Council Bluffs. A successful business that they built from the ground up and proudly owned/operated for several years. A couple of employees lovingly called her "Sarg", as she ran a tight ship and had high expectations for cleanliness, and reliability. 36 years later they are still recognized around town as the donut shop owners and frequently told how much their donuts are missed. Several of their life long friends once started as customers. Sandy later worked in the finance department at both the University of Nebraska Med Center and at the John Day Company until her retirement. She was an active member of Sarah Circle and Trailblazers with Salem United Methodist Church, ABWA, BFF Bible study with First Christian Church, and her ladies card club. Sandy enjoyed knitting, reading, and participating in local car shows with her husband through M.A.A.C and the various activities with Ed at the Tangier Shrine. She and Ed were actively involved in the Cosmopolitan Club, helping to raise funds for juvenile diabetes. She also loved traveling to support her grandchildren's activities. Sandy will be remembered for her infectious laugh, her love of telling detailed stories, and her remarkable ability to connect with friends and family-whether through thoughtful articles she would mail, phone calls, or simply asking about your day. She was a kind soul, had a fun attitude, and a strong love for her family.
Visitation will be held at 10:00 a.m., followed by a celebration of life service at 11:00 a.m., on Saturday, March 28, 2026, at Hoy-Kilnoski Funeral Home in Council Bluffs, IA. A private internment will take place at a later date at Rest Haven Cemetery, LeMars, IA. In lieu of flowers, memorial contributions may be made to the Tangier Shrine Transportation Fund or the Council Bluffs Cosmopolitan Club.
Sandy’s life was a gift to all who knew her, and her warmth, generosity, and joy will be deeply missed.
